Spring has sprung, Mzansi, and as the weather continues to heat up nothing beats a lekker braai. Gauteng chef Katlego Suze comes to your aid with a yummy recipe for spicy basted leg-quarter chicken.
Suze’s chicken is sticky, sweet and marinated to tenderise and infuse it with flavour. The shiny and glossy glaze is just the cherry on top. The smell? Phenomenal.

INGREDIENTS
4 chicken leg quarters
4 tsp garlic butter
5 tsp lemon juice
2 tsp Worcestershire sauce
5 tsp chutney
2 tsp hot sauce
2 tsp BBQ Mexican spice
Salt & pepper
Thyme
Sage
Basting sauce
5 tbsp chutney
2 tsp hot sauce
2 tsp Worcestershire Sauce
Lemon juice

METHOD
1. Preheat oven to 180°C.
2. Rub garlic butter under the chicken skin.
3. Season chicken with salt, pepper, BBQ Mexican spice, sage and thyme.
4. Place chicken in an oven dish and insert into the oven for 25 minutes.
5. Remove chicken from the oven and baste it using your basting sauce.
6. Put it back into the oven for 10-15 minutes.
7. Serve and enjoy.
