Creamy pap with chicken liver stew has always been a beloved dish our mothers cooked. Now, with rising grocery prices, Mzansi families are rediscovering its deliciousness while keeping costs in check.

Enter the unsung hero of the kitchen: chicken livers! With other chicken cuts becoming way too pricey, these little gems are now stepping into the spotlight, bringing affordability and rich taste to dinner tables across the country.

It’s not just about saving cash, though. It’s all about finding a tasty, versatile ingredient that’s good for you too. Chicken livers are a powerhouse of nutrients, packed with iron, vitamins, and protein, all wrapped up in a deliciously affordable package!

Recipe: Creamy pap with chicken livers (serves 6)

Ingredients:

Creamy pap:
  • 500ml (2 cups) water
  • 3ml (½ teaspoon) salt
  • 3ml (½ teaspoon) curry powder
  • 500ml (2 cups) milk or cream
  • 250ml (1 cup) maize meal
  • 50g butter or margarine
Chicken liver stew:
  • 1 onion, chopped
  • 2 cloves garlic, crushed
  • 5ml (1 teaspoon) cayenne pepper
  • 750g chicken livers
  • Salt and pepper to taste
  • 250ml (1 cup) beef stock
  • 2 sachets (40g) tomato paste
  • 30ml (2 tablespoons) chopped fresh parsley
  • 1 can of mixed vegetables

Method:

1. Prepare chicken liver stew:

  • Heat oil in a pan and lightly fry chicken livers until brown. Remove and set aside.
  • In the same pan, fry onions and garlic until soft. Add cayenne pepper and cook for 2 minutes.
  • Return the livers to the pan, season with salt and pepper. Add mixed vegetables.
  • Mix the liquid from the can with beef stock to make up to 2 cups. Add to the pan.
  • Stir in tomato paste, cover with a lid, and simmer for 20 minutes.
  • Add chopped parsley, simmer for another 5 minutes.

2. Prepare creamy pap:

  • In a separate pot, bring water to a boil. Add salt and curry powder.
  • Mix cold milk or cream with maize meal to form a paste.
  • Add the maize meal mixture to the boiling water, stirring continuously.
  • Add butter and cook over gentle heat, stirring frequently until smooth and thickened.

3. Serve

  • Spoon creamy pap into individual serving bowls.
  • Top with the chicken liver stew and garnish with additional parsley if desired.
