There really is something special about a chocolate cake recipe that you can easily whip up when those pesky chocolate cravings have you in a chokehold.
It’s Friday night and there are no bakeries open, but lucky for you Eastern Cape born baker Siphesihle Nomzanga has just the recipe for you. If you are looking to do a bit of baking therapy that requires little to no brain power, then Nomzanga’s recipe for this fudgy chocolate cake might just be for you.
Nomzanga’s chocolate cake is a great emergency cake to have in your arsenal for forgotten birthdays, last minute visitors and your chocolate cravings.

Fudgy chocolate cake
Ingredients
- 2 cups cake flour
- ¼ cup cocoa powder
- 1 cup sugar
- 1½ tsp baking powder
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 3 eggs
- 1 tsp vanilla essence
- 1½ cup vegetable oil
- 1 cup fresh milk
- 1 cup melted margarine
- 1 cup boiling water
- ½ cup Milo powder
- 300g dark chocolate
- 150g butter, unsalted
- 100g icing sugar
- 15g cocoa powder
- As much milk as you require
Instructions
For cake:
- Preheat oven to 180°C.
- In a bowl, combine all dry ingredients.
- Combine milk, eggs, vanilla essence, margarine and oil in a large mixing bowl.
- When everything is combined, add boiling water. The batter will be extremely runny; this is normal.
- Bake at 180°C for 30 – 40 minutes, inserting a knife halfway through baking until it comes out clean.
For chocolate fudge icing:
1. In a bowl set over a pan of simmering water, melt the dark chocolate and butter together.
2. In a separate dish, sieve together the icing sugar and cocoa powder.
3. Once melted, gradually whisk the icing sugar and cocoa powder into the chocolate mixture using an electric mixer.
4. If a thinner consistency is needed, add a splash of milk.
5. Allow to cool completely before using as cake icing.
