INGREDIENTS
For chicken strips
500g boneless chicken
1 cup milk
1 tsp garlic salt
1 tsp basil
1 tsp paprika
Pinch pepper
1 large egg
1 cup plain flour
1 tsp baking powder
½ tsp salt
For fries
Canola oil, to deep fry
500g frozen thick cut chips
Salt and pepper to taste
For cheese sauce
60g butter
3 tbsp flour
500ml milk
95g mature Cheddar, grated
56g Mozzarella
½ tsp Dijon mustard
Salt and pepper to taste
½ red onion chopped
1 tomato
Half cucumber
METHOD
Chicken strips:
- In a shallow bowl combine flour, paprika, basil, salt and pepper, and garlic salt.
- In another bowl beat egg and milk.
- Dip chicken into egg mixture, then flour mixture until coated.
- In a deep-fat fryer heat oil or pan on medium heat. Fry chicken, a few strips at a time for 2-3 minutes on each side until golden brown.
Fries:
- In a deep fat fryer or large deep pot, heat oil.
- Deep fry the fries from frozen until golden brown for about 5-10 minutes.
- Drain on paper towel and season.
Cheese sauce:
- In a medium size saucepan over medium high heat add butter and melt.
- Whisk in the flour and slowly whisk in the milk.
- Add cheese and mix until melted.
- Top chips with chicken strips, red onion, cucumber, and drizzle cheese sauce. Serve and enjoy.
