While South Africans are renowned for our love of sizzling steaks and succulent chops, we’re breaking the mould by grilling up some lamb burgers with pineapple and a fruity relish – a lovely recipe shared by Michelle Parkin.

This flavourful creation combines the richness of lamb patties seasoned with traditional Mzansi spices, the sweetness of grilled pineapple, the creaminess of whipped sheep’s milk feta, and a tantalising mango peppadew relish. It’s a fusion of flavours that will leave your taste buds dancing with joy.

Ingredients:
For the lamb:
- 1kg lamb mince
- 1 ½ teaspoon salt
- ½ teaspoon pepper, freshly ground
- 1 clove garlic, finely chopped
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- ¼ teaspoon ground nutmeg
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground cloves
- ½ teaspoon mustard powder
- 1 pineapple, peeled, cored, and sliced (1cm thick)
- 1 tablespoon olive oil
- ½ teaspoon salt
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- ½ teaspoon cayenne pepper
- 1 iceberg lettuce
- 1 red onion, thinly sliced and blanched
- 2 tablespoons sweet mustard
- 3 tablespoons mango relish
- 6 hamburger buns/roosterkoek or other buns of preference
For the feta:
- 250g feta cheese
- 100g whipped cream cheese
- 1 tablespoon mayonnaise
- 1 tablespoon chopped mint
For the mango relish:
- 1 mango, peeled and diced
- ½ small red onion, minced
- 5 peppadews, chopped
- 3 tablespoons fresh mint, chopped
- 2 tablespoons lime juice
- ¼ teaspoon salt
- ¼ teaspoon chili, very finely chopped
