These baked spicy chicken tikka masala wings are the perfect summer day appetizer. Secunda-based catering extraordinaire Thembeka Sibanyoni shares this easy-to-make recipe for perfectly succulent and juicy wings.

Sibanyoni is the star behind Tee’s Cooking Addiction, a leading catering company in Mpumalanga.
She might not have done any formal culinary courses, but she sure understands the language of cooking – a skill that comes in quite handy when she helps others through her cooking classes to make magic in the kitchen.
The popular cook and entrepreneur says, “Cooking is a language that most people don’t understand. I live every day trying to teach people, and to inspire them to put some effort into understanding this language.”
Following her heart
Sibanyoni had aspirations of pursuing a career in IT but her love for food triumphed over a career in front of a computer. Her love for cooking began at a young age when she cooked for the first time.
“I was 12, and part of the meal (I prepared) was cabbage. My grandparents couldn’t stop talking about it.”
In 2017, Sibanyoni, who now lives in Secunda, Mpumalanga, sacrificed everything to start her own business.
“I started Tee’s Cooking Addiction with no savings and zero funding. Now, two years later, we have assets worth more than R1 million.”
Sibanyoni adds that she only swaps her high heels for a pair of sneakers when she has to work for 12 hours straight. Besides cooking, her favourite things to do are travelling, socialising and, of course, eating.
Her popular social media platform is dedicated to showing her followers how normal day-to-day ingredients when put together, can produce tasty, good-looking dishes.

Ingredients
- 12 chicken wings
- 20 ml lemon juice
- 1 tsp tikka spice
- 2 tbsp chicken, lemon and herb spice (exotic range)
- 1 cup Steers monkey gland sauce
- 15 ml cooking oil
Instructions
1. Preheat oven to 180 degrees Celsius.
2. Toss chicken with the mixture to coat then leave it to marinade for 30 minutes minimum.
3. Place wings on a grilling pan and grill it over 180 degrees for 45 minutes. Keep the remaining sauce for later.
4. Brush the remaining sauce over the wings and grill for a further 15 minutes. Serve and enjoy!
