Pap2Go is an innovative twist on a beloved South African staple. Founded by Willfried Korn, Pap2Go reimagines traditional pap by transforming it into a deep-fried, portable meal.
In this Farmer’s Inside Track episode, Korn discusses his innovative and unique deep-fried version of the traditional South African dish. His pap-based meals are gaining traction at farmers’ markets and private events all over the country.
Originally from Germany, Korn moved to South Africa in 1996 and developed Pap2Go, inspired by the global popularity of sushi.
“I travelled via the Cape Verde Islands, via a sailing boat to South America where I got stuck. Only by chance, I missed one flight to Caracas from Lisbon and there was a flight available to Cape Town. So I took that flight and that was in September 1996. I never looked back,” he shares.

Deep-fried pap
Korn shares that he aimed to create a distinctly African product using pap as the base, filled with various types of meats and deep-fried foods. In this episode, he talks about how it all started with a realisation that sushi had taken over South African food menus, the process involved in making his pap fillings, and more.
“It’s the same concept as a pie, but we use pap as my puff pastry and we use it like a usual British pie, plus the pap needs to be deep-fried. You can’t bake it.
“I tried it in the beginning because people scream, oh, it’s oily, it’s oily, it’s oily. No, if you fry it hard enough and the Pap2Go is also pressed when you fill it, so it doesn’t absorb the oil that you see and taste later,” he says.
The product, which is water-rich, freezes well and can be easily reheated. He has experimented with different fillings and even developed a unique mould for consistent production.
