In an article published on Health For Mzansi, Tshwane-based private chef Thole Mathe highlights the benefits of beef bones, saying they’re “rich in marrow, which supports bone and hair health thanks to the stem cells they contain.”
For him, the secret to flavour lies in the right seasoning: “You can’t go wrong with a Moroccan-style rub, rosemary, and a touch of chilli flakes,” plus a slow simmer with fried onions, garlic, carrots, and cloves to build depth and texture.

Registered dietitian Kulani Mtileni adds that slow cooking bones releases valuable nutrients, including glucosamine and chondroitin, “compounds known to support joint health and reduce inflammation.”
He explains, “Gelatin contains amino acids such as glutamine, which may help support digestive health by maintaining the integrity of the gut lining.”
Bone marrow is another powerhouse, packed with healthy fats, iron, and zinc that support the immune system.
Mtileni cautions moderation: “Bones are also high in saturated fat and cholesterol… consuming excessive amounts may increase the risk of heart disease.”
Balancing these rich broths with other wholesome foods ensures both comfort and health this winter.
